Lumpiang Sariwa - Fresh Spring Roll

This is my own version of Lumpiang Sariwa, which means fresh spring roll. In this recipe I added sticky marinated pork, which in my eyes makes it that bit extra special! This recipe is all made from scratch and is the best way to show off to your friends and family during those Summer BBQs. I hope this step by step guide encourages you to try it for yourself. The Sticky Pork Bites - also a great for BBQ

700g of shoulder steaks chopped into bitesize pieces

3-4 cloves of minced garlic

3 finally chopped small shallots

3/4 sup brown sugar

1/4 cup of fish sauce

1/4 cup of soy sauce


The Filling

500g of minced pork

1-2 cups of small shrimp

2 cloves of minced garlic

3 finely chopped small shallots

4 sprigs of chopped spring onions

2 carrots chopped into thick 'matchsticks'

1 large parsnip chopped similar to the carrots

fresh lettuce

3 tbsp of soy sauce

3 tbsp ofvinegar

2 tbsp of brown sugar

1/2 cup of chicken stock/ water


The Wrapper

1/2 cup of plain flour

1/2 cup of cornstarch

1/2 tsp of salt

3 medium eggs

1 cup of milk/water

The Sauce

2 cloves of minced garlic

3 tbsp of cornstarch

500ml of stock

3 tbsp of soy sauce

1/2 cup of brown sugar

3 tbsp of peanut butter (optional)

Method :

Step 1 - Marinade the pork

Add the pork into a bowl and all the marinade ingredients together, mix and put in the fridge for an hour or overnight if you can.

Step 2 - Cook the filling

Saute the garlic, shallots and spring onions. When the onions have sweated and are soft add the minced pork and brown. When nearly brown add the carrots and parsnip and mix. Add soy sauce, vinegar and sugar 1/4 cup of stock or water and simmer for 5 minutes. When the veggies are soft add the shrimp, S&P mix and leave for a further 1-2 minutes and set aside.

Step 3 - The wrapper

Mix all the dry ingredients such as flour, cornstarch and salt into a bowl and add a well in the middle. Whisk the eggs in a separate bowl then add into the dry ingredients. Mix all together until it's a nice consistency. Warm up a frying pan on low to medium heat, then ladle the batter on to the pan and create a thin layer to cover the whole base. Once the top is cooked use a table know or spatula to lift off the edges and flip over. Once both sides are cooked, set aside!

Step 4 - Cook the pork

In another pan shallow fry fry the pork in a tablespoon of oil. Leave to cook till the starts to caramelise, then turn the pork over. Keep cooking till the sugar is slightly charred.

Step 5 - The Sauce

Mix half a cup of stock with the cornstarch until melted and add the say sauce. In a saucepan, add the sugar an a tablespoon of stock. Once the sugar is a dark brown colour add the rest of the stock and stir until the sugar has dissolved. Then add the cornstarch and soy sauce solution. Add the minced garlic and peanut butter and stir until it becomes a syrup like consistency.

Last step - Assembling

Take a wrapper and place a slice of lettuce a the top of the circle. Spoon on some filling in the centre of the wrapper and top up with pork bites. Fold the bottom up, left to right and right to left then turn so it's lying on its seams. Drizzle the sauce on top of the spring roll and sprinkle either fried garlic or crushed peanuts but we used pistachios!
