Tim started his cooking career from the age of 20, studying in Global Academy, Manila then worked in some of the top contemporary restaurants here in London. His culinary discipline and creative passion has allowed him to design some of the most original menus inspired by Filipino flavours. Working alongside top chefs such as Jason Atherton (Pig and Palm, Cebu) he is definitely not shy to push boundaries. He also appeared on masterchef the professionals. Hats off to you Chef!

Tim will be serving his interpretation of 'Kwek Kwek', a Filipino street food favourite of deep fried orange quail's eggs. Dusted with chilli and vinegar, padrón pepper powder, lastly with pickled shallots.  Don't be fooled by these delicate flavour bombs.
